Above is what I call the Oil display? I tried to draw it anyway.
I'm at work today and didnt bring my Manual.

Is is normal to only have three or four symbols at the begining and flat lines there after?

Use the dipstick.

Mine's fairly accurate. It's been 1/2 way on the guage for a couple of months and 1/2 way between min & max on the dipstick. Topped it up this morning to just below the dipstick max and the guage is indicating max again.

Some people have reported that theirs is way out though.

dont park on a slope when checking with digital guage as that can change the reading sometimes

Thats odd. Just before setting off to drive home I noticed it was back to normal (according to the manual anyway).

I'll use Mr Dip stick Tomorrow.

it is known to fluctuate so best to use alex's advice and go for the dipstick option :D
