Water Temperature - Fidge ventilator

Today I noticed that when I switched off the A/C, the water temperature of the engine started to rise so that the indication on the dashboard slide over the first line after the 90 C. At that point (at about 120 C) the ventilator started to work at a high speed.
So I have a few questions to make to whoever can answer them.
1.What is the normal indication of the temperature when the car is moving in traffic (not on the national roads) with the A/C switched off.
2.Has the ventilator two (2) stages in its function? I mean that my other car (FIAT) at 90 C starts the ventilator at low speed and if the temperature reaches the 110 C it toggles at high speed. Is this happening on 206 CC?
3.If it has two stages, which are the temperatures of the two stages?
I would be thankful is someone answers these questions, because I donâ€™t trust any more the allegation of the Lion Hellas.
And if now that the environmental temperature is below zero the water temperature of the engine is so high, what is going to happen at summer?
Many people may not realize the situation that I describe, because they have always switched on the A/C, and by this way the ventilator of the fridge is always on and of course the heat of the water is vanishing by heating the carâ€™s interior.

My water temperature gauge NEVER goes above 90 degree's Summer or Winter, A/C on/off, or in town or on the Motorway.. It stays at 90!!!
I would get the Water Thermostat checked firstly....

My Oil Temperature Gauge went up to 115 degrees in the summer driving the car hard.. But now it stays at 85-90 degrees with the Oil Cooler radiator fitted..

I forgot to say that my car is the 1.6 lt!
And it never runs at 90 C.It's always over this temperature! I 'm specifically interested in the ventilator of the fridge. Mine starts to work only after the indication slides over the 110 C. Can someone tell me if it should have to start earlier at a lower speed ?

when i borrowed a 1.6 last summer its temperatures were the same as Simon described for the 2.0

Take it back and get it checked.

Finally I got my CC from service and I was told that they had to change a resistor (probably thermistor), so my water temperature never turns over 90-95 C.
