Ive just brought a damaged CC andi need to replace both the air bags, i.e steering wheel and dash.
what i need to know is can i just pick them of another CC in a breakers and get a mechanic to fit them or do i need new ones?
could some one please give me instructions on how to remove them both (dash & wheel airbag) please!!!!

You need new ones and you must get them fitted by a dealer (or at least a qualified fitter). Nothing to do with warranty or being a 'cheapskate' but everything to do with safety.
If they're not fitted properly, they may either go off whilst you're driving normally down the road (which is not good) or fail to go off when you actually need them (just as not good).
Get 'em done properly. Saving money on cosmetics is one thing. Saving money where your life's concerned is an entirely different puppy.
